WHere is a simplified interpretation of a beverage from the seasonal drinks list. This is a large-volume premix that is bursting with flavours of a festive period, making it perfect for hosting a holiday party. Reserve the remaining syrup to use in brunch beverages, desserts, or to make more rounds of this cocktail.

Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put the listed ingredients in a pot, bring to a simmer, agitating so the sugar melts. After that, take off the heat and leave to cool down fully. Pour into a sterilised bottle, close it and refrigerate it in the fridge, it can be stored for about four weeks.
Preparing the Premix: Pour the specified liquid ingredients in a big jug, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, to ensure it's perfectly clear.
To serve: Measure 85ml of the batch mix to a stirring glass filled with ice, and stir lightly for a minute to chill. Pour into a frosted cocktail glass or similar, top with some cranberries and complete it with a brief mist of mandarin oil over the top.
